Hamstring workout + Roasted cauliflower recipe


Hit the gym bright and early to work on my hamstrings. I performed seated hamstring curls, standing leg curls, high leg press, barbell dead lifts, and sumo squats. My legs were super fatigued, but my glutes felt nice and tight. Working against Mother gravity. lol

I had a caesar salad (smile) with chopped rotisserie chicken post workout. Then I trotted over to the grocery store to tackle my Christmas dinner list.  I'm so happy to have that out of the way. I'm cooking a small ham and turkey. If you have a Publix grocery store in your area they have smoked hams for great prices. I paid $8 for a 5 pounder.

I picked the kids up from School and took them for an ice cream cone. It was only right with 70 degree weather. Ha! Can you believe this weather? I'm not complaining at all. I just hope it doesn't throw off the weather next Spring.

Oven roasted cauliflower.

I love vegetables especially roasted with light seasoning.  I was craving cauliflower and remembering trying a recipe earlier in the year via Skinnytaste.com

Oven Roasted Cauliflower
Servings: 5 • Size: 1 cup • Points+: 2 pts • Smart Points: 2

6 1/2 cups uncooked cauliflower florets (about 1 large) cut small
3 garlic cloves, chopped
2 tbsp olive oil
kosher salt and fresh pepper
juice of 1/4 lemon
2 tbsp Parmigiano Reggiano, freshly grated


Preheat oven to 450°F.
Combine cauliflower, olive oil, lemon juice, garlic, salt and pepper well so all the florets are coated and seasoned. Place in a large shallow roasting pan and place in the center of the oven.

I used my go to Bertoilli olive oil spray for zero calories and zero fat. I followed the recipe to the T.  The flavor was so good. I paired it with roasted lemon dill tilapia. 

Steaming broccoli while cooking rice in the same pot. Winning! lol

I steamed broccoli for my youngest son who doesn't like cauliflower. My Cuisinart rice cooker/steamer is great for quick steaming. It's definitely a great timesaver.
