Lunch + Exercise

I enjoyed a healthy balanced lunch of brown rice, spinach, and chicken breast. I finished the dish off with a drizzle of salad dressing (not pictured). My measurements: 1/3 cup of brown rice, 1 cup of spinach (before cooking), 4 oz of sautéed chicken breast. 

I use Perdue fit and easy brand. I buy the thin cut chicken breast for quick even cooking. I season them generously with Mrs. Dash or God Father's seasoning. I pan fry them in zero calorie/fat Bertolli olive oil cooking spray. They come out juicy and delicious every time.

After lunch I popped in my Jillian Michaels, 30 Day Shred and went to work. She kicked my butt. Even though I've done the routine many times before it has been a year since I used it.

No shame with my frame. 136 pounds and loving it. 

I have a confession to make....I haven't worked out in the gym in almost two weeks. Yikes! lol. I've been working out at home and running the neighborhood.  I needed a break from the gym especially coming off a body building competition where I was training 7 days a week twice a day in one. I plan to return next week once the boys start School. It's been fun spending quality time with them. We have several last minute activities to do before the week is out.

I haven't touched salmon since before my last body building competition back in June. It was definitely nice treat.

I prepared it by spraying the entire fish fillet with Bertoli light olive oil spray, next I covered them in McCormicks tomato and basil season and roasted it for 12 minutes at 400. I paired it with steamed zucchini. The flavor was so good.

My measurements: 5 oz of salmon, 3/4 cup of zucchini.  Later guys.
