Roasted Salmon Recipe

Roasted Salmon


I've always baked my salmon at 350 degrees for twenty minutes. It comes out really good most of the time. There was one time when it came out a little dry, but was still delicious. Browsing through my "Cook this, Not that" book, I came across a recipe for roasted salmon. I thought yeah right; this salmon is going to come out extremely dry.  Since my Hubby was away for work I decided I'd give it a try. That way if it didn't come out right it would only be one unhappy camper instead of two. Lol!

Roasted Salmon

You'll Need:
4 salmon Fillets (4 oz each)
1/4 cup of Dijon Mustard
1/4 cup of brown sugar

Note: I was out of dijon mustard at the time so I used, 1 1/2 tbsp of spicy brown mustard and 1/2 tsp of regular yellow mustard in place of the dijon mustard.

How to Make It:
Preheat the oven to 450 degrees
  • Season the fish with low sodium season salt (or any kind of salt you use) and black pepper. Combine the mustard and brown sugar in a mixing bowl and spread evenly over the salmon fillets. I spread the mixture all over the tops and sides of the fish.
  • Place the salmon on a baking sheet and place on the top rack of the oven. Roast fish for 8 to 10 minutes uncovered (I roasted mine the entire 10 minutes), until salmon has browned on the surface and flakes with gentle pressure from your finger. Serve with your favorite side dish. I chose steamed potatoes and sauteed zucchini.

While my salmon roasted I steamed 1 medium sized potato using my rice cooker. When they were done I seasoned them with a one tsp of butter, black pepper, fresh parsley, and a pinch of salt.

The salmon came out perfect. It was tender, juicy and flavorful.

  1. I will definitely try this out, I have to buy more salmon over the weekend anyway! Did you cover the salmon when you put it in the oven for 10 minutes or no cover?
