Healthy Recipes, Exercise, and Clearance Sales

Spicy Egg White Pizza.

I woke up wanting egg dish with fresh vegetables. So instead of making a stuffed omelet. I created an egg white pizza instead. Topping it with bell pepper, mushrooms, spinach, red onions, and asiago cheese. It looks complicated, but I promise you its not.

In a pan add a teaspoon of extra virgin olive oil. Then toss in your veggies and cook them for about a minute or two on medium heat. Take out and set aside.

Coat a non stick pan with cooking spray.  Then add four egg whites and season with salt and pepper. Note: I used the whites from whole eggs.  Let the eggs cook for a few minutes or until they firm up some.

Turn the heat off then add your vegetables and cheese. Place the entire skillet in a 350 degree oven for 5 minutes or until cheese has melted through. Optional: Sprinkle on red pepper flakes for spice.  Enjoy!

Before heading out to the gym I stopped by the mall to check out Aeropostale. They are having an end of the season sale on active apparel and regular apparel. They had tanks priced at $1.99 and up. Tights and yoga pants for $9.99 and up plus more.

I picked up a pair of tights and two tanks. The tights were marked $9.99 regularly priced at $49.50. The red tank was $1.99 and the live, love, dream tank was $8.00. I think I may go back to pick up a few more things. The savings alone is well worth it. Their sizes run from XS to XL. This sale is running online also, but prices are marked down even cheaper in stores.

I end up wearing the new tank I bought. lol

I finally made my way over to the gym for a one hour strength training session. I focused on inner and outer thighs, glutes and abs.

When I retuned home the sun had finally come out. It had been a dreary morning up until then. I snapped a few pictures of my mums that I planted last year before heading in. They are just starting to bloom. They have doubled in size from when they first were planted last October. I made sure to really take care of them during spring and summer season. Mum's are selling just about everywhere such as  the nursery, select grocery stores, Home Depot, Lowe's, etc. They come in many different colors and are relatively inexpensive. It's a great way to add a little color and charm to your home for the Fall season.

My oldest son and I shared a veggie sushi roll for snack. It was his first time trying sushi and he loved it. He's always been open to trying new foods.

I make meatloaf about twice a year. I paired it with mashed sweet potatoes and steamed peas. It was so juicy and tender. It has definitely come along way from when I first started making it years ago. My husband is very thankful for that. Lol!
