Speed Walking Through the Trails

Who doesn't love eggs for breakfast? I can eat eggs everyday of the week cooked up any kind of way.  I went with two over easy eggs and side of crusty potatoes. I popped one baking potato in the microwave and cooked it on the potato setting. 

Start out by washing the potato thoroughly then poke a few holes in it. If your microwave doesn't have the potato setting function then cook it for 5 minutes. If after five minutes it's still too hard, cook an additional two minutes. You should be able to easily pierce a fork through it.  In a medium hot non-stick pan add extra virgin olive oil. Next add one tbsp of minced fresh garlic, cook for one minute, and then add your potatoes. I seasoned mine (while in the pan) with Mrs. Dash Garlic and Herb salt free seasoning and black pepper. Continue to cook them until their golden brown and crusty. 

I started my day at the gym with a full hour of intense leg training. Ending with four miles of speed walking and lunges in the trails. I performed those wonderful walking lunges on the bridge pictured above. Upon completion my legs and glutes were giving me the side eye of utter disbelief. lol!

In total I burned a whopping 1402 calories. I think my beast mode was in overdrive. It felt great!

Lunch: turkey, baby swiss, avocado, tomato, and romaine lettuce neatly tucked between two whole wheat slices of bread. Pressed on the panini press until the cheese was nice and bubbly. It was scrumptious!
