Hanging with LC (Weekend Recap)

After seeing my boys off to school I ventured out to the Greenway trails to meet my fitness sister Didi for a 4-mile power walk. I normally run, but my calves were so tight and sore from the previous day leg workout and was left no option. I enjoyed her company as always and got in a good calorie burn. I left and went to go met hubby at home for lunch.

I prepared us stir fried shrimp and patagonian scallops with zucchini and yellow squash. I used a simple yet flavorful marinade that consisted of light soy sauce, sesame oil, fresh garlic, and brown sugar. It was light, low carb, and filling.

Later on that evening we enjoyed a decadent cookies and crème cupcake.

Saturday morning we headed out to the YMCA for a full body workout. Made sure to get a fitness selfie in before leaving. lol

I lightly fried tilapia in extra virgin olive oil and made a simple side salad of romaine, avocado, tomato, and red onion for dinner. I hadn't had fried fish since New Years so this was a very nice treat. We watched The Amazing Spider Man 2 on red box to complete the evening. 

On Sunday morning I decided to tend to my garden and yard. I pulled weeds, deadheaded flowers, and picked up trash while Hubby cut the grass.

I burned a whopping 761 calories. Woowhooo!

We had baked ziti and steamed broccoli for dinner. I got the recipe from I made just a few changes. I used jarred spaghetti sauce, ziti pasta, and ground beef only. It was delicious. It'll be even better the next day after all the flavors gel together. Yay for leftovers! lol

My family and I eat pasta two to three times a month. I love pasta dishes because they're simple and affordable. Win, Win!
