Shrimp and Turkey Kielbasa Fried Rice


I loved starting my day with a cup of plain hot herbal tea.  

Breakfast

Before heading to the gym I fueled my body with plain rolled oats and fresh strawberries. I don't think I will ever get tired of oatmeal. I've been eating them since I was a little girl. It provides me with plenty of energy to get through some of my vigorous workouts.  

Flexing

I tackled back and biceps on this day. I'm very pleased with the growth of my biceps so I usually only exercise them once per week. I also hit abs and completed 40 minutes of cardio on the Elliptical.

Lunch

I don't consume protein shakes right now and haven't for about six months now. I try to get all of my nutrients from whole foods. I eat a lot of lean chicken, fish, and other seafood. I also eat lean grass-fed beef as well. I made fried rice using turkey kielbasa and shrimp.


Ingredients:
1 egg
1/3 lbs white shrimp 
2.5 oz of turkey kielbasa
1/4 cup chopped onion
2 tbsp of fresh minced garlic (I love garlic)
1 1/2 tbsp of extra virgin olive oil
1 tbsp of light soy sauce or Bragg's liquid amino 
1/2 cup of leftover jasmine rice or (brown rice, couscous, quinoa)

This recipe yields 2 servings. You can cook more or less by adjusting the amount of the ingredients. 

Using a wok or a non-stick skillet on medium high-heat add the olive oil and garlic. Heating it through for 1 minute. Next add in your onion and stir-fry/sauté for 1 minute. Add rice and soy sauce. Cook for 1 minute. Toss in your shrimp and kielbasa. Cook through for about 2 minutes. Push all your ingredients to the side leaving a hole in the middle of the pan. Pour in your lightly scrambled egg. Allow the egg to firm up a bit then gently fold it in until it's cooked through.  I added 2 cups of fresh sautéed spinach to my dish. (Optional) Enjoy!
