Seared Scallops with White Beans & Spinach

I purchased the book Cook This, Not That (Skinny Comfort Foods) recently from Books-A-Million. I've tested out a few recipes so far and I'm very pleased with the results. I love scallops so any recipe that includes it I'm game for. The ingredient list wasn't complicated at all and cooking directions were very easy to follow.


2 strips of bacon (chopped into small pieces

1/2 of a red onion minced

1 tbsp of fresh minced garlic

1 can (14oz) white beans, rinsed and drained

4 cups of baby spinach

1 lb of large sea scallops

Salt and black pepper to taste

1 tbsp of butter

Juice of 1 lemon

I used all ingredients above, but added 2 more strips of bacon, 1 extra cup of spinach, and 1/2 tsp extra of garlic. I also used 1 1/2 cans of beans instead of just 1. 

White Beans

The book recommends you use cannellini beans so that is what I purchased, but any white bean should be fine. 

Prepped Ingredients (Minus the Bacon)

How to Make It:

Heat a medium saucepan over low heat. Cook the bacon until it has begun to crisp. Add onion and garlic; sauté until the onion is soft and translucent, 2 to 3 minutes. Add the beans and the spinach and simmer until the beans are hot and the spinach is wilted. Keep warm.

Heat large cast iron skillet or sauté pan over medium-high heat. Blot the scallops dry with paper towel and season with salt and pepper on both sides ( I used old bay season). Add butter and scallops to the pan and sear the scallops for 2 to 3 minutes per side, until deeply caramelized. 

Before serving, add lemon juice to the pan season with salt and pepper if needed.

There you have it, perfectly seared scallops on top of creamy white beans and spinach. Hubby and I enjoyed every bit of this 5 star meal. lol.
