Asian Beef Short Ribs

Asian Beef Short Ribs

I pulled my recipe books out looking for food inspiration and came across a crock recipe for short ribs. I love crock pot meals because of the simplicity of it. Throwing fresh ingredients into a pot with your choice of meat cooking it low and slow is bound to create something magical. I looked in my pantry to see what I had on hand and was surprised to see I had everything required sans the meat to make this dinner happen. I made a quick trip to my local Publix and picked up a little over 2 lbs of beautiful bone in all beef short ribs. 


Ingredients

 Ingredients I used:

2 lbs beef short ribs, bone-in

1 bag of baby carrots

1/2 onion, quartered

3 large garlic cloves, roughly chopped

1 tablespoon of minced fresh ginger 

1 teaspoon of light soy sauce

1/4 cup rice vinegar

1/3 cup brown sugar

1 tablespoon of honey

1/4 tsp crushed red pepper flakes

1 tablespoon of flour 

1 tablespoon sesame oil

1 cup of beef broth

olive oil, hefty drizzle (for browning)

kosher salt and pepper (for seasonings ribs)

green onions/scallions for garnish

serve with rice (optional)

You may substitute any ingredients you like.



Start out by seasoning the ribs with salt and pepper on all sides. Heat oil over high heat in a cast iron or other heavy metal pan. When oil is hot, lay ribs down in pan and cook each side for about 1 to 2 minutes or until browned. Once your done with that add the ribs to the crock pot. pour 1 cup of beef broth over ribs.


In the same pan you seared the ribs add your garlic, ginger, soy sauce, sesame oil, vinegar, brown sugar, honey, red pepper flakes, onions, and carrots. Cook for about 1 minute. 


Next, dump the entire mixture over the ribs. Cover and let it do it's thing on low for eight hours on high for five to six hours. 



I roasted asparagus and broccoli in extra virgin olive oil, garlic, black pepper and kosher salt to compliment this meal.




Asian Beef Short Ribs

The whole family really enjoyed this meal. I will most definitely cook this again in the future.
