Throwback Thursday: Rainbow Trout with Mango Salsa



Fish is a mainstay in the Walke household; I typically prepare salmon or tilapia at least once during the week. Due to the regularity in which I prepare this dish, I'm always looking for innovative ways to spruce up this family favorite. Today during a routine stop in Publix I ventured over to the produce department, where I spotted freshly ripened mango's calling my name! The moment I saw these beauties the idea of making homemade mango salsa came to mind. I've never made a fresh salsa myself before, but I most certainly was up for the challenge. I inserted the above stated key word into the Google search engine, and instantly at my fingertips arrived a ton of recipes and videos, which all seemed relatively easy to make.

I chopped up red onion, green pepper, tomato, cilantro, and one ripe mango. I then added all the ingredients to a large bowl tossing with one tablespoon of fresh lime juice and 1/2 tsp of salt. The amount of ingredients will vary according to how much you're preparing. You can pretty much use your own discretion when making this dish. Click here for mango salsa recipes.

I found an easy to follow recipe on Foodwishes.com for a simple broiled trout. Click here for the video. I halved and tossed some baby brussel sprouts in extra virgin olive oil sprinkling with kosher salt. I then roasted them in the oven at 400 degree's until tender crisp. Cooking time will vary according to how much you're making. This meal was light and refreshing.

  1. I recently made this salmon dish with pineapple salsa and it was so good (will be blogging about it soon). My first time making pineapple salsa and it really complimented the fish. Will be trying this recipe soon.
