My Meatless Monday

Consistent effort is a breeding ground for success, and in order to keep my efforts consistent I challenge myself by setting realistic obtainable goals. One of such said goals, set for this week was to incorporate vegetarian meals into my diet. I started out with a warm bowl of cream of wheat adding a 1/3 of a cup of granola. There is nothing like warm cereal on a cold day! My body felt fueled and ready to hit the gym to train chest, triceps, and abs.

Preparedness is a process that fosters positive habits, and I’m always prepared to be positive! This morning wasn’t an exception, but the rule; my husband snapped a few pictures of me as I was exiting stage left in route towards the gym. Armed with a smile, I decided to add value to my training by wearing 5 lb ankle weights today. The additional weight increased the level of resistance, which intensified the burn I experienced during my workout. 753 calories worth of burn to be exact, according to my Polar FT7 Heart Rate monitor watch.

After returning home from an intense session at the gym, I needed to feed my muscles with protein. I've fallen head over heels for the Pasta Prima ravioli brand. Just last week, I enjoyed the spinach and kale; however, today I selected the heirloom tomato, basil, and mozzarella ravioli, which fit my meatless Monday theme perfectly. I tossed it in a little extra virgin olive oil and sprinkled with fresh grated Parmesan cheese; paired it with sautéed asparagus, mushrooms, and onions. It was superb!

Following lunch I ran errands, but not before packing a snack for the road. I went with almonds, apple slices, and grapes.

Dinner was a simple teriyaki vegetable stir-fry with 1/2 cup of black beans and 1/2 cup of jasmine rice. The heartiness of the black beans satisfied whatever meaty craving my taste buds experienced quite nicely.

I really enjoyed all of my meals today. I'll definitely be adding more vegetarian dishes to my weekly meal planning.

  1. I tried the DriSweat headband and I think it made my edges worse. So I'm definitely looking for other options

  2. Yikes. I haven't had any issues as of yet. I tend to wear my dri-fit hat or save your do gym wrap more.

  3. I'll have to invest in a dri-fit hat and see if that works. Im okay if I sweat out the middle of my hair, but I hate when I sweat out the edges.
