Omelette Delight

Omelette with lean turkey, baby portabello mushrooms, spinach and pearl onions. Recipe inside.

1 whole egg
2 egg whites
2 cups of spinach (dry)
1/3 cup of mushroom
1 tsp of onion
0.9 oz of turkey (optional)

I sauteed the mushroom and onion for about 2 to 3 minutes using only pam cooking spray (you can also use tsp of olive oil). I added the spinach and sauteed for another minute or so. Take your veggie mixture out and set it aside. Pour your egg mixture into the  pan and let it cook for a few minutes before adding your vegetables and turkey (optional). Fold over when its cooked to your likeness.
