Curried Tuna & Apple Pita

I found this recipe in one of my favorite Oxygen Magazine books. I decided to give it a try for after a grueling workout at the gym. The recipe is inexpensive, easy to make and very flavorful.

Curried Tuna & Apple Pita Recipe
Ready in 15 minutes * makes 1 serving

3 oz canned tuna, drained
1/4 cup chopped, unpeeled apple
2 tbsp of greek yogurt (I used miracle whip)
1/4 tsp curry powder ( I used more just because I love curry)
1/2 tsp of dijon mustard
1/2 tbsp chopped unsalted nuts (I didn't have any to use and it still came out great)
Sea salt, to taste (I used Kosher salt)
1/2 large whole wheat pita
1/2 cup of shredded lettuce leaves

1. In a small mixing bowl, combine tuna, apple chunks, yogurt, curry powder, mustard, peanuts, and salt.

2. Line the pita with lettuce and spoon in tuna salad. Serve immediately. Refrigerate any leftovers.
