Dinner for 2: Bourbon Salmon

While picking up a few items from the grocery store, I made my way over to the seafood department. I picked up 2 fresh bourbon marinated salmon fillets. I wanted to throw them on the grill, but decided against it. I've baked salmon many times but wanted to try something different so I pan seared them in extra virgin olive oil. I scored the skin side so that it would cook evenly. Remember leave them alone while they cook. You will start to see the fish turn opaque in color while its cooking, when it reaches halfway up the fish then flip it to cook the other side. I cooked them for about 3 to 4 minutes per side on medium high heat.. Time will vary depending on the size, cut, and thickness. I paired it with steamed broccoli and jasmine rice. Delicious!
